A few years ago when I started making this dish, I took a bunch of different Caesar salad recipes and played around until I came up with my own version that I liked. I make the dressing in larger batches so that I can freeze some and get more than dinner out of it. This is supposed to be an easy dinner, but making a small amount of salad dressing every time can get tedious for me. So all the dressing measurements in this are super-sized to get at least 2 dinners for 2 out of it. If you’re cooking for a crowd, this is probably enough for 4 to 6 people.
