This was a spontaneous dessert on a cold winter day that I threw together one afternoon, and it was luscious and yummy for dessert that night. Next time I would add a couple more apples and cut back on the sugar. It was really, really sweet. Maybe 6 apples, 3/4 brown sugar, and 1/4 granulated for the apples? The crumble was good, but by the time all that sugar cooked down it was overwhelming. But the concept was fabulous, I’d definitely make this again.
Like most of my slow cooker meals this year, this one was another Pinterest find. This time from Fake Ginger. I’m seriously addicted, there’s just great stuff on there. Everything from high-end gourmet finds to can-o-soup Americana casseroles. Not my favorite, but I love all the variants out there.
For the apples:
1 cup brown sugar
1/2 cup granulated sugar
5 large apples, peeled and cut into chunks
1/4 teaspoon salt
1 teaspoon cinnamon
For the topping:
2/3 cup oats
2/3 cup loosely packed brown sugar
1/4 cup flour
1/2 teaspoon cinnamon
3-4 tablespoons softened butter
1 teaspoon vanilla extract
In a mixing bowl, combine brown sugar, granulated sugar, apples, salt, and cinnamon.
Spread onto bottom of slow cooker.
Mix your crumble topping ingredients until it comes together.
Sprinkle it over top of the apples. Cook on low for 4 hours, or high for 2 hours.
Turn off heat and let sit, covered, for one hour to let the caramel thicken.
