This month was full of birthdays and celebrations and fun. H and I are out in Lancaster county as I type this, checking out trains and horses and fabric and ice cream. We head home tomorrow, and maybe I’m just viewing the month with rosy glasses because I’m having so much fun with my little sidekick. But, March rocked.
I saw these a few weeks ago in a Tasty/Tipsy/Totsy Facebook video. I don’t remember where the video was from, but these eggs looked amazing. There was doubt on my FB feed that these could possibly be real. When I Googled, I found several blog posts that pointed me to a 2006 episode of Martha Stewart, where she and a staffer made them. That link has all the directions. And they looked 100% real. So I decided H and I would try them this year.

So this is the custom project I was working on for a friend. Audrey is a sorority sister I met…wow, about 12 or 13 years ago? And we’ve been part of several alumnae chapters together. She did all of these 5ks a few years ago, but the race bibs have just been hanging around. So, she asked me to put them together with some pink fabric (pink is one of our sorority colors).
I think next time I would run my immersion blender through this soup for a bit of a thicker texture with fewer shredded potatoes, but otherwise this was pretty good on a chilly night. I’d had a bag of shredded potatoes in the freezer for a while, from some long-forgotten recipe I was going to make, so this was great for using up what I had on hand. We both love potato soup, and I never would’ve thought about shredded potatoes.
