It’s the last day of 2015, with exactly 92 minutes left on the clock as I write this sentence. Our champagne is chilled, we’re in for the night with family, and I’m reflecting on what a wonderful, and sometimes incredibly stressful, year it’s been.
Use your imagination here, and picture a gorgeous, silky looking sauce instead of a mess of onions. Because that’s what this is, even if the photos don’t show it. I made this the last two New Year’s Eves in a row, and I still can’t take a proper photo. Last year I forgot to buy shallots and used an onion instead (hence the jammy look of the sauce above).
So here’s the thing about November and December: they were kind of the worst.
H spent 2 nights in the hospital the week before Christmas having some tests done. Everything came out clear, but we were still camped out in a hospital room with our little girl. And we may have more tests ahead of us. Nothing life threatening, but still awful. That photo above was when we first checked in, before she was all hooked up to wires.
